- 4 shallots (large, diced)
- 6 cloves garlic (minced)
- 20 oz. tomato
- 1 wedge olive oil
- 6 oz. ripe olives (green, drained and sliced in half)
- 25 oz. canned chicken breast (drained)
- 1 lemon juiced
- salt
- pepper
- pasta water (reserved, I used approximately 1/2 cup- see notes)
- 1/4 cup fresh parsley (finely chopped)
- 1/2 cup grated Parmesan cheese (freshly, plus more for serving)
