- 40 grams honey (~2 tbsp)
- 8 grams sea salt (1½ tsp)
- 1 tsp. apple cider vinegar
- 30 grams milk powder (~3½ tbsp, I use whole goat milk powder)
- 455 grams wheat flour (freshly milled, ~3 3/8 cups, I used Edison wheat, which is a hard, white, spring wheat, and I sifted and reground the bran to be quite fine.)
- 5.5 grams instant yeast (1½ tsp)
