Really tasty and easy to make I took advice of another review and made half the mixture, which I found made enough for two people

Not the most exciting meal out there, but tasty and easy to make, and I love all the fresh vegetables! As a small woman, I find this recipe definitely makes three servings, not two. I make it in the morning before I leave for work and that's lunch for the next three days! It also got rave reviews from a friend of mine.
