- 1/4 cup maple syrup (or honey if not vegan)
- 3/4 cup pumpkin puree
- 2 Tbsp. banana (mashed ripe, primarily for binding)
- 2/3 cup brown sugar (packed, + more to taste)
- 1/2 tsp. sea salt
- 2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1 tsp. pumpkin pie spice (+ more to taste)
- 1/2 cup water
- 1 cup gluten-free rolled oats
- 1/2 cup almond meal (ground from raw almonds)
- 1 1/4 cups gluten free flour blend
- 3 Tbsp. pepitas (I mixed in a couple pecans)
