- 1 sweet onion (halved and thinly sliced)
- 5 cloves garlic (peeled and smashed)
- 1 Tbsp. chili powder
- 2 tsp. ground coriander
- 2 tsp. ground cumin
- 1 tsp. sea salt
- 1/2 tsp. ground black pepper
- 1/4 cup apple cider vinegar
- 1 1/2 cups water (filtered)
- 14.5 oz. diced tomatoes (with juices)
- 2 whole chipotle chilies in adobo sauce (canned, that’s 2 chilies, not 2 cans, chopped)
- 2 bay leaves
- 1/4 cup molasses
