- 3 carrots (grated)
- 2 cucumbers (grated)
- 1 Tbsp. fresh ginger (grated)
- 1 Tbsp. cilantro (/ parsley.)
- 1 date (finely chopped, / 1 TBS date honey, * definitely recommend the Palm)
- 1 Tbsp. olive oil
- 2 Tbsp. rice vinegar
- 1 Tbsp. soy sauce
- 1 tsp. sesame oil
- 2 scallions (chopped / 1 TBS Ispanakhi, A spicy spinach, walnuts Tapenade)

Directions
- 1. First, prepare the soba noodles using the instructions listed on the back of the packaging.
- 2. Grate the carrots and cucumbers using a food processor or a grater.
- 3. In a small bowl, Mix vinegar, ginger, date / date honey, soy sauce, sesame oil, olive oil, and ispanakhi.
