- coconut oil (or your favorite cooking oil)
- 6 cups cauliflower (chopped 1.5 lbs; 680 grams, about one small head)
- 1 medium onion (chopped, 8 ounces; 227 grams)
- 4 cloves garlic (finely chopped)
- 1 1/2 Tbsp. coconut oil
- 15.5 oz. beans (cannelini, 439 grams; canned, drained)
- 3 cups vegetable broth (low sodium broth, or chicken bone broth)
- 13.5 oz. coconut milk (400 mL; full fat)
- 3/4 cup rolled oats
- 3/4 tsp. Garam Masala
- 1 pinch salt
- 2 Tbsp. cashews (chopped)
- 2 Tbsp. coconut flakes (unsweetened)
- 2 Tbsp. ghee (melted, for vegan: substitute coconut oil or vegan butter)
- 2 Tbsp. unsweetened applesauce
- 1/4 cup dried apples (crunch or freeze-, I used crushed Trader Joe's crunch-dried honey crisp apples)
