Blackberry, quinao, oatmeal, Greek Yogurt Muffins

Gluten free. Low carb. Diabetic-friendly. Quinoa flour has a very earthy, somewhat bitter taste. Natural ingredients such as one banana, agave, used to mask the bitterness slightly. You may substitute the blackberries for a blueberries, which are more naturally sweet. You may also want to add one tbsp more of agave if you like, or a larger banana. I'm diabetic so I generally prefer to keep even the natural sugars to a mimimum. Best when warmed up in the toaster oven with a tbsp of almond butter! You can freeze if not being consumed within the week! Enjoy it!
Ingredients
- 1 cup flour (quinao)
- 1 1/3 cups gluten (free quick oats)
- 1 cup greek yogurt (organic non-fat)
- 2 eggs (organic)
- 1 pt. blackberries (mashed)
- 1 banana (small, mashed, 20 carbs)
- 1/4 cup grape seed oil
- 1/2 tsp. baking soda
- 2 tsp. baking powder
- 3/4 tsp. Himalayan pink salt
- 2 tsp. agave syrup
- 1 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- 4 walnut halves (for the top)
- 1 Tbsp. almond butter (for the top when being eaten.)
Directions
- In one bowl mash the blackberries.
- In another small bowl mash the banana.
- Mix all the dry ingredients.
