I found this recipe to be pretty lacking in terms of flavor at first and needed to add some seasonings, but after sitting in the fridge overnight it blended a little better and was fine. As other comments have said, go easy on the cayenne

we didn't have sweet potato or bell pepper, so I made it with normal potato & no bell pepper
it was quite spicy, enough that my bf couldn't eat it x.x' I used 2 potatoes & followed everything else exactly...
I'd like to try it with sweet potato & bell pepper as called for, but more importantly, next time I'll add the cayenne/chili in pinches instead of following the literal measurements

Fantastic! I felt so good after eating this.. great way to start the day. I made it as is and it was perfect. I added salad greens to my plate and put the eggs on top so I can eat some extra nutrients. Made the plate look great as well. 😋

made this as per directions but added Morning Star Chorizo to jazz it up for dinner. 🙌🙌

I didn’t find the recipe so I punted & did fairly well! I found out my husband doesn’t like crisp vegetables, so I’d cook it longer.
I’m not sure about egg sequence. They were yummy soft, but very cold. I chopped everything the day before & was glad I had.

Not bad. I used a poblano pepper for a little more kick. A slice of avocado on the side helped too.

Really tasty...I made mine for dinner and added leftover ground beef. Either way it was amazing!

It was an interesting recipe that I am glad i tried. Be sure to soften the sweet potatoe prior to mixing in the other vegetables and season with a heavy hand.
