Description
All you need is clove — and coconut milk-infused black bean purée garnished with granulated cassava. This sweet purple frejon plays well with spicy deep-fried fish that's browned to perfection.

- 2 cups dried black beans
- 2 oz. whole cloves
- 2 cups coconut milk (use more or less to achieve desired consistency)
- 2/3 cup sugar
- 3 pinches kosher salt (for frejon)
- 1 pinch ground Cameroon chili pepper
- 1 pinch garlic powder (for frejon)
- neutral-flavored cooking oil (such as peanut, vegetable, canola, safflower, or corn, for frying)
- 1 whole snapper
- 2 tsp. powdered iru (fermented locust beans)
- 1 tsp. bird's eye chili powder (also known as Thai chili, more or less as desired)
- 1 Tbsp. sea salt (for fish)
- 1 1/2 tsp. garlic powder (for fish)
- 1 cup all-purpose flour
- 2 Tbsp. garri (granulated cassava)
- 2 sprigs fresh rosemary (optional, for garnish)
