Preheat the oven to 375°F.

Grease two 12-cup muffin pans with nonstick cooking spray or olive oil.

Finely chop the onion and bell pepper and coarsely chop the spinach.

Set a large frying pan over medium-high heat and add the olive oil. Once oil is shimmering, add the pepper and onion. Cook, stirring occasionally, until vegetables are softened and lightly browned, 3-4 minutes. Add the spinach and cook until wilted, about 1 minute. Remove pan from heat and set aside.

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper. Fold in the sausage crumbles, cooked vegetables, and cheese.

Divide the egg mixture equally between the muffin cups.

Bake the egg bites on middle rack of oven until they are puffed and lightly golden on top and just firm in the centers, 20-23 minutes.

Check to see that egg bites are done. Remove from oven or add time as needed.

Let egg bites cool in pans for 5-10 minutes. To remove, run a small sharp knife around the edge of each muffin and lift up at an angle.

Transfer egg bites to a plate and serve warm. Leftover egg bites can be refrigerated in an airtight container for up to 5 days.
