Preheat the oven to 400°F.

Drizzle the parsnips with olive oil and sprinkle with the salt and black pepper. Use a spatula to toss until they are evenly coated.

Roast the parsnips on middle rack of oven, stirring once or twice during the cook time, until they are fork-tender and slightly caramelized, 40-50 minutes.
