Preheat the oven to 400°F.

Remove papery skins from the outside of garlic bulbs. Detach the cloves from the roots.

Cut two sheets of aluminum foil roughly 10 inches each.

Place one sheet of foil on a baking sheet and scatter the garlic cloves on top. Drizzle evenly with the olive oil and sprinkle with salt. Lay the second sheet of foil over cloves. Crimp edges of the two sheets tightly together, creating a packet.

Roast the garlic on middle rack of oven until a toothpick easily pierces cloves, 45-50 minutes.

Check to see that garlic is done. Remove from oven or add time as needed.

Roasted Garlic Cloves
Allow garlic to cool for at least 20 minutes. Once it is cool enough to handle, unwrap the bulbs. Serve whole, or squeeze roasted cloves from their skins into a bowl.
