Preheat the oven to 400°F.

Line a large baking sheet with parchment paper. Set aside.

Chop the butternut squash into 3/4-inch cubes.

Arrange the squash cubes in an even layer on the prepared baking sheet.

Spray squash with nonstick cooking spray. Sprinkle with the salt, black pepper, and nutmeg, if using. Toss lightly to coat.

Roast the squash on middle rack of oven, stirring halfway through cook time, until it is fork tender and golden brown, 30-35 minutes.
