- 1 onion (finely sliced)
- 1 red pepper (finely sliced)
- 100 grams shiitake mushrooms (finely sliced)
- 160 grams tofu (marinated, pieces)
- 50 grams fresh peas (use defrosted frozen peas if fresh are not available)
- 6 spring onion (white and green parts, thinly sliced diagonally)
- 2 cloves garlic (finely chopped)
- 5 cms ginger (piece, finely chopped)
- 1 red chilli (finely chopped, keep seeds in for extra heat)
- 1 lime
- 1 Tbsp. fresh coriander (finely chopped)
