- 2 onions (finely chopped)
- 3 garlic cloves (minced)
- 1 Tbsp. ginger (freshly grated)
- 3 Tbsp. coconut oil (melted, or olive oil)
- 4 Tbsp. red curry paste (adjust according to taste)
- 1 Tbsp. Garam Masala
- 2 tsp. turmeric
- 2 tsp. brown sugar (I used coconut sugar)
- 1/2 tsp. cayenne pepper
- 29 oz. tomato puree
- 2 tsp. fine-grain salt
- 1/2 cup coconut milk (I used BPA-free Natural Value)
- chopped cilantro (Fresh, or parsley for garnish, optional)
