I used almost 4 cups of leftover cooked rice and brought to a boil in 2 cups of milk with 1 cup raisins in a saucepan. Even though the rice was already cooked it easily absorbed into the rice. I let that sit while I mixed the pudding with two cups of milk and the canned sweetened condensed milk. I also used instant vanilla pudding and doubled the vanilla and cinnamon. I wonder if it might have benefitted from a little salt.
It was easy to make and a great way to use up leftover rice!
