- 1 cup pecans (or walnuts, diced and toasted if desired)
- 1 cup shredded unsweetened coconut (preferred or sweetened coconut)
- 1/2 cup dried pineapple (diced)
- 6 Tbsp. butter (85g, at room temperature, at least 65°F)
- 8 oz. cream cheese (1 package, 227g, at room temperature)
- 1 tsp. vanilla extract
- 1/8 tsp. salt
- 3 1/2 cups confectioners sugar (sifted)
- 2 Tbsp. milk (or enough to make frosting spreadable)
- 1/4 cup crystallized ginger (optional)
