  • 3 1/3 cups chickpeas (cooked, drained and rinsed)
  • 1 onion (diced)
  • 2 celery stalks (chopped)
  • 2 carrots (diced)
  • 2 garlic cloves (minced)
  • 2 cups panko breadcrumbs
  • 1/2 cup soy milk (unflavored)
  • 3 tablespoons vegan Worcestershire sauce
  • 2 tablespoons soy sauce (or tamari)
  • 2 tablespoons olive oil
  • 2 tablespoons ground flax seeds
  • 2 tablespoons tomato paste
  • 1 teaspoon liquid smoke
  • 1/4 teaspoon black pepper
  • 1/4 cup tomato paste
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce (or tamari)
  • 1 teaspoon paprika

    This has made it to my regular menu rotation ...super delish and if you make sure you don’t over process the chickpeas as noted in the instructions it holds together very well...easy to slice...doesn’t fall apart ...and most importantly...DELISH!

    I'm very pleased! I may experiment with the glaze next time better compliment the hickory taste of the meatloaf that the liquid smoke provides.

    Wow, this turned out great! I didn't have an onion or carrots, so I substituted them with extra celery, some red pepper and a good amount of onion powder. I also substituted liquid smoke with cayenne powder and smoked paprika. The glaze is amazing and surprisingly I had no trouble getting it all to stick together.

    It turned out great. It tasted pretty gross. Mashed potatoes help this out tremendously as a side dish. Otherwise, you are going to spend way too much prep time to be very disappointed.

    No resemblence to meatloaf whatsoever. Added a few extra seasonings, after tasting, the during mixing process. Otherwise, I followed the receipe. Will not be making again.

    Delicious! Added some peppers and cayenne to spice things up 👌😋 and it was even better the next day as leftovers

    This was GREAT!. It smelled so good when I was mixing and while baking. I was hoping it would taste as good and I was not disappointed. The sauce on top was a little strong for me but I just scraped most of it off. I did add an egg as a previous post suggested. No other alterations. I will definitely be adding this to my regular dinner planning rotation.

    One HUGE improvement to be made on the recipe is making a flax egg with the 2 T ground flax, THEN mixing it in. If you're not vegan, a normal egg will suffice. This step is absolutely critical to the loaf staying together when slicing and eating. To make a flax egg: 1. mix 2 T ground flax with 4 T hot water 2. blend in food processor to get egglike consistency 3. mix with hands into the rest of the mixture as last step before forming loaf

    For a vegan meatloaf it was what was expected. I secretly made it for the guys at the fire station and they had no clue it was meatless, until they tasted it. They were all pretty upset and i was banded from cooking so mission complete.

    I consider myself a pretty good cook and followed this recipe to a “t” but it came out crumbly and not favorable, save yourself the time and money and find another recipe. maybe if you want try add some vegetable stock to make it more moist. not sure why you need to cook it so long and on so high a temperature maybe do it at 350 for 20 minutes with the glaze on it. tossed it in the trash bummer.

    I liked it but it didn’t quite turn it as I expected. Still, it was good, and a nice way to bet some veggies on your plate.

    It was delicious! i will create more meals from this! i did it almost exactly as directed except for a few mistakes i made along the way...but thats what makes each recipe unique❣️. hope ypu all enjoy this as mich as i did

    The topping was very nice, but i think i accidentally added too many chickpeas, so the flavour of the ‘meatloaf’ was not as flavoury as i expected. Will try to get the flavours better next time!

    The topping is really good, the loaf tasted okay the night of, but had a weird smell and not so good the next day.

    We didn’t eat it because it tasted horrible. I think we didn’t like it because the liquid smoke.

    First time we made this today we added hot pepper sauce and came out fantastic. Was a bit dubious about making this after reading the reviews. Think you just need to go for it and and a bit of flavorings / seasonings you like. Will be making again for sure. Key is not to over blend it.

    Turned out a little dry, but that was probably my fault. I was worried about it being too wet so I cooked it a bit longer. Flavors were good though and I’ll definitely make again.
