- 8 oz. bread (slightly stale open-crumbed, chewy, peasant-style, not sourdough)
- 8 Tbsp. olive oil (mild-tasting)
- 1 1/2 Tbsp. champagne vinegar (or white wine vinegar)
- salt
- cracked black pepper
- 2 tsp. pine nuts
- 3 garlic cloves (slivered)
- 1/4 cup scallions (slivered, about 4 scallions, including a little of the green part)
- 1 Tbsp. warm water
- 1 Tbsp. dried currants
- 2 Tbsp. chicken stock (lightly salted, or lightly salted water)
- 1 roasted chicken (we like Barbara Kafka's: https://food52.com/recipes/17568-barbara-kafka-s-simplest-roast-chicken)
- 3 handfuls arugula (frisée, or red mustard greens, carefully washed and dried)
