- 1 small zucchini (quartered lengthwise, sliced, about 1 1/2 cups)
- 1/2 cup chopped onion
- 1/2 cup green bell pepper (diced)
- 1 can black beans (15 oz each Rosarita® Premium Whole, drained, rinsed)
- 1 can fire roasted diced tomatoes (14.5 oz each Hunt's®, with Garlic, undrained)
- 3/4 cup water
- 1/4 tsp. dried oregano
- 1 cup instant white rice (uncooked)
- 1/2 cup shredded cheddar cheese (blend)

Loved it! Easy, quick, healthy and delicious. I used olive oil instead and sprinkled a little Himalayan salt. Will be making often.

We omitted bell pepper and added a small onion, 4 cloves garlic, salt and pepper and put it over regular long grain white rice instead of cooking them together. Also left out the cheese. Was awesome :)

I used brown rice instead of white and some salsa instead of the fire roasted tomatoes. I also leave out the cheese. It's a nice quick & healthy weeknight meal that the whole family loves!
