- 2 lb. zucchini (yellow or green)
- 5 tomatoes (large, ripe)
- 2 Tbsp. olive oil
- 2 cups yogurt (thick, plain whole)
- 1 clove garlic (crushed)
- 2 fresh chiles (to taste, original recipe calls for red, but I had a jalapeno on hand and used that, seeded and finely chopped)
- 1 lemon (and 1 tablespoon lemon juice)
- 1 Tbsp. pomegranate syrup (plus more to drizzle, original recipe calls for date syrup, so if using date syrup increase the lemon juice to 2 tablespoons)
- 2 cups walnuts (lightly toasted and chopped)
- 3 Tbsp. fresh mint (chopped)
- 1/2 cup parsley (chopped)
