Description
When your garden is at its peak, you are likely going to have an abundance of zucchini. This soup is the perfect way to use some of that zucchini for a healthy and light meal. This recipe requires only 9 ingredients and comes together in about 30 minutes, perfect for summer days when you are busy enjoying the nice weather and don't want to spend all night in the kitchen. Basil and parmesan cheese each add their own bold flavors to the soup and perfectly accent the mild zucchini.

- cooking spray
- 1/4 onion (coarsely chopped)
- 1 clove garlic (chopped)
- 3 zucchini (medium, coarsely chopped)
- salt
- ground black pepper
- 2 cups chicken broth
- 10 leaves fresh basil
- Parmesan cheese (grated)

Directions
- Spray cooking oil on a saucepan, add the onion and garlic, and cook for 3 minutes until the onion becomes transparent.
- Add the zucchini, season with salt and pepper to taste, and cook for 3 more minutes.
- Add the chicken broth. Cover the saucepan and cook for 10 minutes or until the zucchini is soft.
- Let it cool off, add the basil, and place in the blender and puree.
- Serve, sprinkling Parmesan cheese on top.
