Used corn starch mixed with plain flour instead of coconut flour. Added chopped parsley and spring onions. Topped with sour cream. The boys devoured the whole lot in a minute.

Hit for the whole family! I would say to add another tablespoon or so of flour (I used all purpose instead of coconut) and to definitely dry out the zucchini before adding it to the sweet potato. The cumin flavor might be too strong for some people, so be careful of that too. Overall, delicious!

Great flavour and taste however not as crispy as I wanted. Only change I made was I used 4 tbsp of all purpose flour instead of 1 tbsp coconut flour.
