Zucchini is an extremely versatile vegetable, they can be roasted, baked into sweets, or stuffed as is the case in this recipe. Cheese, mint, basil, and cilantro come together for a bold and flavor-packed filling. - 6 mint sprigs
- 1/2 bunch basil
- 1/2 bunch coriander
- 4 Tbsp. heavy cream
- 1 shallot (finely chopped)

Directions
- Preheat oven to 425 degrees Fahrenheit.
- Clean the zucchini, and cook for 12 minutes in a pan of boiling salted water.
- Drain and let cool.
