    Spectacular recipe. Doesn't require a mixer of any kind. I used a mandolin with the very small grating for our zucchini. The result is a very moist, aromatic cake. I usually dont add nuts to my batters. I added chopped pecans to the frosting. This will be a great addition to my recipe box. If you are a fan of spice cake this reminds me of church luncheons or a good old pot luck addition. Additional dried fruits would also make this even better like raisins.

    Yummy!! I would make it again. I couldn’t get the butter to brown but still really delicious.

    Great flavor. Came out niether too moist or too dry. I tried to squeeze as much moisture out of the zucchini as I could.
