  • 1 cup oats (ground, measured before grinding; this comes out to about ⅔ cup oat flour; use gluten free oats if necessary)
  • 1/2 cup flax (ground golden)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon ground cloves
  • 3/8 teaspoon stevia extract (THM Pure, Powder, to taste)
  • 1/2 cup butter (softened)
  • 3 eggs
  • 2 teaspoons imitation vanilla flavoring
  • 1 teaspoon maple flavoring
  • 1/3 cup canned pumpkin puree (plain pumpkin with no additives)
  • 1 cup unsweetened almond milk
  • 1/3 cup egg whites (the carton kind works great)
  • 1 cup zucchini (grated, juice and all, thawed if frozen)
