- 3 1/2 cups light brown sugar (packed)
- 2 cups light olive oil (not extra virgin, this makes a big difference)
- 2 Tbsp. vanilla extract
- 6 large eggs
- 1 1/2 cups all-purpose flour
- 3 cups wheat (whole, flour, I used freshly ground hard white wheat)
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 4 1/2 tsp. ground cinnamon
- 2 1/2 tsp. ground nutmeg
- 3/4 tsp. ground ginger
- 1/2 tsp. ground cloves
- 2 tsp. kosher salt
- 2 cups walnuts (chopped and divided – set aside 1/2 cup)
