  • 1 pound ground sausage (can use country sausage seasoned with sage, mild or hot. You can also use links and 'coin' them.)
  • 2 medium zucchini (. cut in half, twice. then cut down the length into 1/2 inch slices.)
  • large onion (cut into half inch chunks.)
  • red pepper (optional)
  • mozzarella cheese (8 oz is 2 cups)
  • garlic (/onion spaghetti sauce, or use your own favorite- 'chunky' fits right in with the texture of this dish)
  • crumbles (You can also use Morningstar Farms sausage, and make this completely vegetarian.)
