I loved it!! i added some grated Fontina cheese to the mozzarella on the top.

It was great. I had some leftover chicken Marsala and added it to the ricotta mixture. So light and summery. Great with a piece of good Italian bread. My husband loved it.

definitely a keeper! i added sausage and some italian herbs to the filling. boyfriend loved it! should've broiled the zucchini a bit longer but it didnt turn out soggy as i was concerned about. tried cutting different thicknesses but the 1/4 inch that the recipe specifies is the best.

The zucchini rolls were delicious!!
I chopped up chicken and also added some cottage cheese for the filling. So cheesy and flavorful..Will definitely be making again.

Grilling the zucchini first made a world of difference, didn't come out soggy or mushy! I broiled it a bit after the 20 min cook time to give the tops better color.

A good substitute for a traditional lasagna or stuffed shell. I put a little too much salt on the zucchini, so overall it was a bit too salty! Tasty though. I made this with vodka sauce because I had half a jar left. The substitution was good!

Super easy to make! Grilled the zucchini quickly before throwing it in the oven really made a difference.

This was a delicious way to eat zucchini!! I added Italian sausage to my homemade marinara sauce and it was fantastic. I will definitely keep this recipe.

Delicious but a bit watery. Probably next time will dry out the zucchini before grilling. Or reduce oventime (as suggested in the recipe).

This is a keeper! I put the zucchini in the toaster oven on broil for 2 1/2 min on each side. After baking the dish the zucchini still had a nice crunch. Moments after it was finished I was asked when I was going to make it again. I will say, I did add more garlic to the mix than the recipe called for but I love garlic.

Yummy! Grilled, filled and rolled the zucchini the day before then pored away the excess liquid before adding the tomato sauce and mozzarella. Everyone loved them, will be making more next time.

Sliced the zucchini a bit thinner and didn't pre-grill it at all. Turned out great!

Couldn't slice zucchini thin enough so I didn't make roll ups. After I laid the marina down in the pan I put the zucchini slices in and then poured the egg,cheese, seasoning mix on top of it. I then took a second egg, beat it with 1/2 cup of mozzarella, 1/2 cup of marinara, 3 tbsp spreadable butter and then poured that over. lastly I grated Parmesan cheese over the top. Sealed it with foil baked it and it is delicious

This recipe left me wanting. It's odd too, because there's a lot of quality ingredients here, they just somehow don't add up to more than the sum of their parts. I would say it's just not worth the considerable time investment, and I was still hungry afterwards. That being said, I don't generally cook vegetarian, so maybe I just don't know the tricks of the trade yet. Considering how almost everyone says a recipe is good - once they've modified it - I'm not at all surprised I'm a bit disappointed.

My new favorite low carb and meatless dish. I didn't have a grill pan, so I just fried the zucchini in a skillet. Very simple and tasty! I love zucchini, but I'm not as fond of shredded or long shredded (zoodles) so this is lovely.
