Description
Zucchini rice/pulav is a very simple recipe using minimum ingredients but the flavor is great. I started making it for my daughter when I could not find fresh bottle guard in the grocery store. Zucchini are low in calories (approximately 17 food calories per 100 g fresh zucchini) and contains useful amounts of folate, potassium and antioxidants like Vitamin C and provitamin A A favorite among low-carb dieters and anyone who wants to lose weight fast, zucchini has a very low score on the glycemic index. Due to its high water percentage, zucchini is low in calories, carbs and sugars.To add more filling volume to your meals with little extra calories, you can use zucchini in a variety of different cuisines and recipes. This Indian version of Zucchini rice is a very kid friendly recipe and contains dietary fibers to soothe upset tummy.
Ingredients
- 2 zucchini (medium size, washed)
- 1 cup rice (washed and drained)
- 2 cups vegetable stock (organic and salt free)
- 2 red chilies (dried whole)
- 1 bay leaf
- 1 black cardamom
- 1 tsp. cumin seeds
- 2 garlic cloves (finely grated or chopped)
- 1/8 tsp. turmeric powder
- 1/4 tsp. Garam Masala
- 1 Tbsp. oil
- 1 Tbsp. butter
- salt (to taste)
Directions
- Trim the ends of Zucchini and grate. Keep aside.
- Warm 2 cups of vegetable stock in the microwave.
- Heat oil in a pan/karahi on medium flame. Add bay leaf, whole red chilies, black cardamom and cumin seeds. Once the cumin seeds crackle add the grated garlic cloves and saute for 10-15 seconds.
