- 1/2 tsp. salt
- 3/4 tsp. cinnamon powder
- 6 Tbsp. unsalted butter (at room temperature, check notes)
- 1/3 cup granulated sugar
- 1/3 cup light brown sugar
- 1 tsp. vanilla extract
- 1 large egg (at room temperature)
- 1 cup shredded zucchini
- 1 cup rolled oats
- 1 cup oats (Quick 1 minute, I was out of rolled oats and used quick oats. check notes)
- 1 cup semi sweet chocolate chips
- 3/4 cup cranberries

These were good but were a bit difficult to hold together when dropping onto cookie sheets. I used 2 cups rolled oats, so maybe that’s why. I also think it was too many chips. I didn’t use cranberries and used stevia in place of white sugar to cut the sugar total. Oh, and I used only the 4 tablespoons of butter for health reasons. Made more than 30 cookies!!
