I was skeptical about making the zucchini noodles, but one daughter had given us a spiralizer, and I’m cutting way back on carbs since I’m diabetic. However, The zucchini noodles surpassed any expectations. My wife said they were better than any pasta, and I have to agree.
I made some minor changes (a habit). After cutting the zucchini into spirals, I laid them on paper towels on the suggested cookie sheet. After 20 minutes I patted them dry, removed them, and laid fresh paper towels on the cookie sheet. I spread the zucchini on the fresh paper towels and sprinkled the zucchini again. I waited another 20 minutes and patted the dry again before cooking.
The only problem I encountered was that I didn’t make enough zoodles. I will be making these to use with a Chinese dish instead of rice next.
