I love this rich dinner. I do not have grill so roasted and broiled. I needed twice as much zucchini and cut it thicker. I also macerated it( lay it out on rack salted, let it sit and rinsed and dried it, to remove more moisture) .

Will definitely make it again. Flavors and zucchini consistency was great, I just need to keep practicing to figure out how to make it less watery.

This recipe is awesome! Even my most picky vegetable eater.. (my mom) 😊 ate it and said it was delicious! I did add a little bit of Italian seasoning in the sauce and the zucchini I found in my grocery store was alot smaller than called for so I used 6 small ones instead of 3 medium ones. All in all... I will make this again.
PS. I tried to mark it 5 stars but my phonewont show me the other 2 stars to mark. ⭐⭐⭐⭐⭐

I LOVED this recipe!! We’ve made it many times since finding it. We literally can’t get enough! I love the way it sits in your stomach after eating. It’s soo light but you feel soo full! Definitely a wonderful replacement of pasta lasagna!!

What a great recipe. I used regular parmesan rather then the type called for. I also doubled the recipe and made half with regular noodles for my family who doesn't really like veggies as much. I added mushrooms to both and spinach to the zucchini one. They were delicious! Great reviews from all 5 people who ate it.

It was great,! I add lots of extra flavours, with spices and heat as we like it loaded . I would definitely roast the zucchini next time as I had too much juice and had to keep draining the liquid. My husband loved it though. We try to keep carbs low and zucchini or speghetti squash is a new frequently used replacement for pasta. The kids are getting used to it but not huge fans yet. They either eat it or starve! Just kidding. :) Angelique P

Was so tasty....made with ground sausage instead of beef, I didn’t have 16 ounces of motz....so used some sliced motz. Also added shaved Parmesan. Took a minute to make but so much healthier than pasta and so yummy!!

Very yummy! I added a bunch of different cheeses including cottage and cream cheese with the egg instead of ricotta as I did not have any. Also added an orange pepper, tomatoes and fennel seed(lots of fennel seed) was completely and utterly delicious!!

I added lots of extra Italian seasonings and garlic. It was delicious. None of us are on low carb diets, we just like zucchini. I froze a few slices too and it was pretty good a few weeks later.

Took a long time to prepare and cook but it was deliciously amazing. Next time I’m just going to wait for the weekend to make it. I did made a bit of changes as I didn’t prepare the sauce at home and instead bought Prego tomato basil garlic sauce, couldn’t find the Parmigiano Reggio so used Frigo shredded Parmesan and added a little more of the Ricotta Cheese and use Venison meet instead of beef. Husband and daughter enjoyed it!

Fine it was delicious but definitely not enough zucchini noodles but I love the meat sauce I use it for spaghetti too

Really good! My mom is on keto, so this was great. Obviously there are tomatoes in it, but since aha had no carbs that day at all she could have it.

Really tasty! Made thisbwith turkey inteas of beef. Thinking of adding sausage next time. Didn't miss the noodles at all!

Very good!!! Definitely do the salting and the grilling, as I've tried another recipe that didn't call for this and it was super watery! Time consuming, so when I make it, I do it on a Sunday and it lasts for 4 meals for my husband and me (along with a salad). I substitute lean ground turkey for the lean beef and it's just as good! I also suggest getting 2-3 more zucchini than the recipe calls for.

Love it!
I had to modify it though bc under just the ingredients pages it just says “tomatoes.” In the directions it says can of crushed tomatoes so I had to use some sugar free pasta sauce

This was delicious! Will definitely fix this again...I just used a canned low carb sauce but it was just as tasty as lasagna only without all the guilt..

Best lasagne I've ever made, said my husband. I did modify some things though.
1. Sauted: yellow squash, 2 handfulls of fresh spinach, mushrooms, chopped fresh basil, and shallots, pinch of kosher salt. Put this mix under the top layer.
2. I put GF lasagne noodles under the zucchini noodles.
3. Used Thrive Basil Pasta sauce.
Prepping the zucchini is key and really delivers this dish!!
Turned out absolutely delicious!!!

I’ve made this casserole for years. We use ground turkey instead of beef, and the recipe doesn’t make enough sauce. I make a recipe and a half, and in a pinch, use spaghetti sauce. This gets rave reviews every time. And great for those gluten intolerant folks.
