This is a great recipe! My husband said, “This is like potatoes au gratin!” And yes he’s right. But the no gluten, no complex carb version. I still love a really good potatoes au gratin, but this is a really good variation and will go in the regular rotation. One change - I used cheddar and parm because I didn’t have Gouda handy. I’ll have to pick up some Gouda to compare.

This turned out awesome! I made this without planning ahead so i substituted mozzarella/provolone shredded cheese - next time I will plan ahead and try Gouda 🧀 definitely making this again 🥒🧅🥛🫕
