- 2 cups whole wheat flour
- 1 zucchini (grated)
- 1 carrot (medium, chopped, or use 10-12 baby carrots)
- 1 apple (cored and chopped)
- 2 eggs (or 1/2 cup egg beaters liquid egg)
- 1/3 cup sugar (I used stevia, follow the package instruction for 1/3 cup sugar)
- 1/4 cup honey
- 1 tsp. vanilla
- 1/3 cup apple sauce (unsweetened)
- 2 Tbsp. canola oil
- 1 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. ground ginger

Directions
- Preheat oven to 350 degrees F. Line muffin tins. *I still spray muffin tins with cooking spray so that the muffins don't stick to the paper so much.
- In a medium sized bowl, combine the eggs, vanilla, sugar, honey, applesauce, oil, grated zucchini, chopped carrots and apple.
- Stir in the whole wheat flour, cinnamon, ginger, and baking soda. The dough will be thicker than normal muffins.
- Scoop into muffin tins and bake about 25 minutes or until a toothpick inserted into the center of the muffin comes out clean.
- *You can freeze these muffins after they are cooled. I kept them in the freezer for three weeks. Microwave them for 1 minute before eating.
