- 1/4 cup coconut oil (melted, plus more for greasing the pan)
- 1 cup granulated sugar
- 2 tsp. pure vanilla extract
- 1 tsp. fresh lemon juice
- 1 cup shredded zucchini
- 1 cup shredded carrot
- 1 cup apple (grated, I used red, but you can use whatever variety you like)
- 1 cup chopped nuts (minced candied ginger, dried fruit, or other add-ins, optional)

Excellent recipe. I added pumpkin seeds for some crunch and made three small loaves instead of one large loaf and reduced the cooking time to around 50 minutes. I also used 3/4 c of demerara sugar instead of the granulated, Even my sister said it was yummy (although she could just be humouring me) and she normally refuses anything with zucchini in it. Will definitely make again.
