This was fantastic! I had to cook it longer than the recipe stated to get the edges brown. I was afraid it would fall apart when I flipped it so I used another sheet or parchment paper and a silicon baking sheet to support it - worked perfectly. And I always used what’s on hand, which means modifications so this had little ricotta and cotija in the crust instead of parmesan. Topped with parmesan and burrito + a few thin slices of leftover charcuterie. Delish! Then fresh basil from our garden served with homemade marina for dipping.
