- 1/2 tsp. cinnamon
- 1 1/2 cups chopped walnuts (or pecans)
- 3 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 1/2 tsp. pure vanilla extract
- 2 cups shredded zucchini (coarsely)
- 8 oz. pineapples (can of crushed, drained)
- 3 Tbsp. butter
- 1 1/2 cups dark brown sugar (or light)
- 1/4 cup water
- 4 cups sugar (powered, If you want to pour the icing on the zucchini bread, cut the powdered sugar down to two cups.)
- 1 tsp. vanilla
