Nowhere in this recipe does it make mention of the water released by the zucchini. So I didn't drain mine and after 30 minutes (10 minutes more than the recipe required) of cooking, STILL had a mushy mess inside the muffins. I cooked them again the next day at a higher temperature for another 30 minutes.
The taste is good but the tops are crusty. Think of the edges of a brownie. Next time, I'm going to drain the zucchini and reserve the water to add if the batter looks too dry.
