I made this tonight and was disappointed. The recipe sounded so good, but it was bland. Something was just missing. Maybe if I would have used cheddar, instead of the Parmesan. ??

This is an excellent appetizer and infinitely adaptable. i use fresh herbs and add garlic and crushed red pepper flakes. Doubles easily. Grate the onion and squeeze it dry with the zucchini. .Have served this twice recently to friends needing a snack before dinner after plane travel and it is hit. Light, but just filling enough. Sauvignon blanc worked well with it. Thank you for this recipe!

Just made these - Ohh my goodness. Yummy!!!!!!!!!!! I added quinoa in it. Definitely a go to for me now!
