- 3/4 cup puy lentils (dry brown, green, or Le, picked over, substitute 2 cups cooked lentils, or 1 can, drained and rinsed)
- 1 head cauliflower (washed and chopped into bite-sized florets, about 1¾ lbs after prepping)
- 1 red onion (large, sliced)
- 1 Tbsp. safflower (grapeseed, canola, or coconut oil)
- 2 tsp. spice mix (za'atar)
- 2 Tbsp. lemon juice
- 1/2 tsp. smoked paprika
- 1/2 tsp. salt
- black pepper (to taste)
- 4 cups arugula
- 1/3 cup tahini paste
- 1/3 cup water
- 1 clove garlic (crushed or very finely minced)
- 2 1/2 Tbsp. lemon juice (about 1 lemon)
- 1/2 tsp. salt
- 1/2 tsp. harissa (powder or paste, more or less, depending on your tolerance for heat)
