- 2 boneless skinless chicken breasts (uncooked)
- 1 Tbsp. avocado oil
- 2 Tbsp. za’atar seasoning (divided, this is the one I currently have)
- 1/4 cup lemon juice
- 1 head cauliflower (chopped into small florets)
- 2 Tbsp. avocado oil
- 1 lemon
- 1/2 tsp. garlic powder
- 3 pinches sea salt
- 1/2 cup quinoa (uncooked, + 1 cup water or low sodium stock)
- 1 cup English cucumber (each thinly sliced, and halved cherry tomatoes)
- 1/4 cup raw cashews (option to dry toast them in a frying pan to enhance flavour)
- 2 Tbsp. fresh parsley (minced)
- 1 Tbsp. extra virgin olive oil (each, and fresh lemon juice)
