Description
Making ricotta cheese is fun and easy! Look for unpasteurized milk for making ricotta; ultra-pasteurized milk should be avoided, as it won't set up properly. For a decadent treat, smear fresh, warm ricotta on a piece of homemade bread and top with your favorite jam.

- 4 cups whole milk (unpasteurized)
- 2 cups cream
- 1 tsp. salt
- 1/2 cup lemon juice

Directions
- Heat milk, cream, and salt in a large sauce pot, stirring occasionally, until the mixture is frothy and reaches 200 degrees F. Do not boil.
- Remove from heat and slowly stir in the lemon juice. Let stand for 10-15 minutes until curds form.
- Place cheesecloth over a strainer and gently spoon the mixture into the cheesecloth, being careful not to break up the curds.
- Let strain for 30 minutes. Store in the refrigerator until ready to use.
