  • 4 cups whole milk (unpasteurized)
  • 2 cups cream
  • 1 teaspoon salt
  • 1/2 cup lemon juice

    Directions

    1. Heat milk, cream, and salt in a large sauce pot, stirring occasionally, until the mixture is frothy and reaches 200 degrees F. Do not boil.
    2. Remove from heat and slowly stir in the lemon juice. Let stand for 10-15 minutes until curds form.
    3. Place cheesecloth over a strainer and gently spoon the mixture into the cheesecloth, being careful not to break up the curds.
    4. Let strain for 30 minutes. Store in the refrigerator until ready to use.
