- 1 lb. beansprouts (approximatey 4 big handfuls)
- 2 tsp. kosher salt
- 1 carrots (large, grated on the large holes of a box grater)
- 1 purple onion (small, very thinly sliced)
- 1 jalapeno chilies (seeds and ribs removed, very thinly sliced, keep some of the ribs and seeds if you'd like your slaw a little spicier)
- 1/2 cup chopped cilantro (roughly)
- 1/3 cup rice wine vinegar
- 1 Tbsp. sugar
- 1/2 tsp. black ground pepper (freshly)
- 1/2 cup mayo (or aioli)
- 2 Tbsp. Sriracha
- 6 hot dogs (good quality, choice, I use a very juicy organic chicken dog)
- 6 slices bacon (good quality, choice, I have found maple bacon particularly luscious)
- 6 hot dog bun (or rolls, preferably ones that are large and sturdy)
- 4 scallions (thinly sliced)
- 1/2 cup salted roast peanuts (roughly chopped)
