Traditional Southern mashed potatoes infused with a yellow curry sauce to make a great tasting fusion.
Ingredients

- 3 lb. russet potatoes (peeled)
- 4 Tbsp. butter (melted)
- 1/2 cup half & half (fat-free)
- pepper
- 1/2 cup coconut milk
- 3 Tbsp. curry sauce (yellow)

Directions
- Peel potatoes. Boil the potatoes in 6 quarts of water until fork tender. Let cool a little.
- Place in the bowl of your stand mixer and mix until mashed.
- Add the butter and half & half until combined. The potatoes should be smooth.
