- 1 onion (medium, red or white, sliced thinly)
- 2 medium carrots (julienned)
- 1 bell pepper (sliced into thin strips)
- 100 grams mushrooms (sliced)
- 100 grams sweetcorn (baby, sliced lengthways into strips)
- 100 grams green beans (cut in half)
- 100 grams mangetout (or sugarsnap peas, cut in half)
- 100 grams broccoli (or cauliflower, chopped into small pieces)
- 1 soba noodles (pack of, I used these Asda rice noodle nests, one per person)
- 2 Tbsp. vegan Worcestershire sauce
- 2 Tbsp. mirin
- 2 Tbsp. soy sauce
- 1 Tbsp. white wine vinegar
- 1 1/2 Tbsp. tomato ketchup
- 1 tsp. brown sugar
- 1 garlic (finely chopped clove of)
- 1 tsp. fresh ginger (grated or chopped, whichever is easier for you)
