- 2 eggs
- 8 medium shrimp
- 4 oz. chinese roast pork (sliced thin)
- 1 medium onion (thinly sliced)
- 1 clove garlic (minced)
- 1 red bell pepper (or small green, julienned)
- 4 oz. boiled ham (or Virginia, sliced thin)
- 10 oz. rice noodles (soaked in warm water for 30 minutes to an hour, use kitchen shears to cut the noodles to about a 10-inch length so they don’t bunch up when stir-frying)
- 1 Tbsp. Shaoxing wine
- 1 pinch sugar
- 1 Tbsp. oyster sauce
- 1 tsp. soy sauce
- 1 tsp. sesame oil
- 1 scallion (cut into 2 inch pieces)

This recipe came out great for me, if I want a little more sweetness I could easily add some teriyaki sauce to it. Was easy to make, I used organic, vegan rice noodles and did not used shrimp for my version. Everyone in my household loved it.
