  • 1 package wonton wrappers (white, *, NOT the yellow/Cantonese/Hong Kong type)
  • 430 grams ground pork (at least 30% fat)
  • 1 salted duck egg
  • 2 teaspoons ginger (grated)
  • 2 teaspoons toasted sesame oil
  • 1/4 teaspoon dashi (granules)
  • 1/4 teaspoon ground white pepper
  • 3 teaspoons corn starch
  • 1/3 teaspoon salt
  • 1/2 teaspoon soy sauce
  • sauce (to finish:, for a snack size of 8 wontons ***)
  • 1 tablespoon chopped cilantro (or scallions)
  • 1/2 clove garlic (grated)
  • 2 tablespoons chili oil (I used homemade which I have posted under “condiments”, but store-bought could do as well)
  • 1/2 tablespoon soy sauce (the best you can find)
  • 1/2 teaspoon vinegar (dark Asian, something like this)
  • 1/4 teaspoon rice vinegar
  • 1/4 teaspoon ground white pepper
  • 1/8 teaspoon sichuan peppercorn (ground)
  • 1/8 teaspoon dashi (granules)
  • lemon juice (Little squeeze of)
