Wonderful, light, spongy, and the perfect balance of flavors. The only alterations I made was that I subbed in coconut sugar because thats what I had on hand (and because I prefer the more complex, deeper notes of the coconut sugar) and I used canola oil instead of olive because I prefer the cleaner taste of canola in baked goods. Wonderful recipe to turn to when I have a full jar of starter and am not ready for bread yet. I wound up making a double batch because I had so many ripe bananas and poured off a lot of starter. These will be going fast.
